Easy Baked Chicken Nuggets
A quick homemade breading can turn chicken into better-than-fast-food quality nuggets.

- 1 lb chicken breast or tenderloin
- 1 egg
- 1/2 cup almonds
- 1/2 cup oats steel cut or old fashioned
- 1 tsp seasoning of choice garlic + everything spicy
Preheat oven to 400°F
In a blender or food processor: Combine oats, almonds, and seasoning into flour consistency. Transfer to a shallow bowl.
Cut chicken to create nuggets. 1-1.5 inch pieces
In a separate shallow container, crack and whisk egg
Dip chicken pieces into egg, letting the extra drip back into the container. Then dredge in the flour mixture. Space out onto a baking sheet
Bake nuggets for 15-20 minutes or until fully cooked, flipping halfway through for even browning.
Options:
Spices. You can use as much or as little as you prefer. For this batch, I used around 1 tsp garlic powder, and 1 tsp of Flavor God Everything Spicy.
Other great alternatives include chili powder for something spicy, paprika for a smoky flavor, or even Italian seasoning.
